Raw Broccoli Best for Cancer Fighting
For the most anti-cancer benefit from broccoli, eat it raw. That's the conclusion of new testing that compared levels of a compound called sulforaphane in cooked versus raw broccoli. Sulforaphane is thought to have powerful anti-carcinogenic effects. Researchers found that bioavailability--the amount the body can absorb and use--of sulforaphane from raw broccoli was 37%, compared to just 3.4% from cooked broccoli.-Journal of Agricultural and Food Chemistry
